High Protein Pancakes

recipes_peanubutternbanana2.jpgMost people I know love pancakes.  It is hard to find a really great oat based batter or even a quick wheat pancake batter that is truly whole grain.  Like most moms, breakfast needs to be quick.  I love buttery, fluffy pancakes, but I need a healthy breakfast.  This is not just for my kids, but so I can survive my day.  I need fuel.  So my new trick is to put almond dust in the batter and make my cute little animal pancake dollars.  

 

How do you make almond dust?  I simply take raw unsalted, almonds and put them in my high-powered blender and crush them into chunky dust.  Once my batter is blended and creamy, I mix several tablespoons in the batter.  I will admit, I will sometimes add cinnamon or a little brown sugar if I want to get fancy.  But my goal is to get more protein into my breakfast when we are looking for a change up from oatmeal, eggs or meats.

 

It gets better than this - I will make lots of batter and then use it up, ending up with more pancakes than my family of 5 can eat.  I put the leftovers in the refrigerator and then toast them like bread and spread the most delicious, healthy peanut butter on them.  Alright I will keep it honest, I also add bananas and  totally cheat with nutella and chocolate chips - but that wasn't the point of this blog.  Seriously, try adding crushed almonds to your pancake batter.
