It's summer. I am melting at the beach as I write this, the waves crashing against the shore, the sand heavy and compact beneath my toes. Though I try and limit sweets these days to fruit, sometimes I want something cool and creamy. Banana carob pudding to the rescue. Carob is a great way to add that chocolate flavor without the sugar or calories. And plenty of potassium from the bananas will keep you from getting muscle cramps in the heat. 

So get ready for a quick, easy pudding that will be ready in 3 minutes or less!  

Banana Carob Pudding

Ingredients:
1 1/2 ripe bananas
1 tbs. carob powder
orange zest, to taste, optional
walnuts, chopped, for garnish, optional

Puree the bananas in a blender. Add the carob powder and orange zest. Garnish with walnuts. Enjoy!
