I am not sure why I never gave Brussels Sprouts a chance when I was a kid. They carry about 10 calories each, which is actually higher than I thought considering I just ate about 20 of them. But setting caloric intake aside for this evening, they are so darn healthy. I have been craving them for the past couple of days. I eat them at least once a week. But I have wanted to eat these little cancer preventing veggies a different way than my norm, boil then sauté in olive oil with nuts. Since I can't always get to Hub 51, who has absolutely the most delicious Brussel Sprouts salad - meant to be shared with others (I don't need to share it myself), I have been stewing on another way to cook them. So I came up with a new way and I loved it. So I thought I would share it with you. I began with the normal boiling of the little high protein and vitamin C greens. I did so just enough to change their color. Then I cut them in half. Then I stuck them on a skewer through the middle so inside layers are exposed. Then I brushed them with butter, garlic, celery salt and soy sauce (low sodium). The inside layers had all the seasonings so that when I laid it on the hot grill it would burn the flavor in. It worked. I loved it. Although it was time consuming to prepare, I figure when you know you are grilling it is worth the effort. I filled up on it and had little steak or pork, but I am not disappointed. So if you like these ancient Roman veggie that bare their name from their 13th Century Belgium home, try this simple recipe.
